Confirm it is defrost and not airflow
A blocked vent and a failed defrost look the same from the door. They are separated by looking at the evaporator, which means taking the back panel off the freezer.

On a cabinet that has been building ice for months this is the bulk of the visit, and nothing underneath can be measured until it is done.

Test the three parts as a circuit
The heater, the thermostat and the sensor are tested together, because a heater that measures correctly and never runs is a control or a sensor problem wearing a heater's symptoms.

A defrost cycle is sized for the frost a healthy cabinet makes. If a door or a gasket is letting warm wet air in continuously, the repair works and then comes back.
